Sue's Applecake Recipe 2 cups flour 1 teaspoon baking soda 3/4 cups crisco oil 1 cup sugar 2 eggs 1 pinch of salt 1 teaspoon cinnamon 1/2 cup walnuts 1/2 cup chocolate chips 3 cups sliced or diced apples ( about 2 apples) 2 teaspoon vanilla Sift together flour, salt, cinnamon. and baking soda and set aside. Using a wooden spoon only, mix together well the oil, sugar and eggs in a mixing bowl. Add vanilla, nuts and chocolate chips adn mix. Add flour mixture and mix again. Then fold in apples. Mixture will be very thick. Use either tube pan or a loaf pan and bake at 325 degrees for 1 hour, until done. Use cookie sheet and make squares for a party - it is great. * Sue uses a bundt pan and bakes for about 40 - 45 minutes at 325. Potato Chip Cookies 1 stick + 5 Tablespoons margarine Beat margarine until creamy. Add sugars and eggs. 3/4 cup sugar Beat in flour with baking soda 3/4 cup light brown sugar With spoon stir in nuts & butterscotch chips 2 eggs Then gently stir in potato chips 1 package butterscotch chips Drop by Tablespoons on ungreased cookie sheets 2 cups flour (1 teaspoon baking soda in flour) Bake 350 for 15 minutes 1 cup chopped nuts 4 oz potato chips Lenny's Roasted Red Pepper Spread 1 cup roasted red peppers, rinsed and dried Blot dry red peppers. In food processer fitted with metal blade, 1 package (8 ounces) cream cheese, softened combine peppers, cream cheese and salad dressing & recipe mix; 1 packet (1 ounce) Hidden Valley Ranch Salad process until smooth. dressing and recipe mix Spread on baguette slices and garnish with olives if desired. Baguette slices , sliced ripe olives (optional) Also good on crackers! Toffee Dip with Apples 3/4 cups packed brown sugar Combine the first 4 ingredients in a bowl; beat at medium speed of a 1/2 cup powdered sugar mixer until smooth. Add toffee bits and mix well. Cover and chill. 1 teaspoon vanilla Combine pineapple juice and apples in bowl; toss well. 3/4 cup toffee bits (about 4 ounces) Drain apples; serve with dip 1 cup pineapple juice 4 red apples - cored and cut into pieces Blueberry Streusel 1 1/2 cup flour Spoon flour into cup and level off. Pour onto waxed paper. 1 1/2 teaspoon baking powder Add baking powder and salt to flour; stir to blend. 1/2 teaspoon salt Cream 1/4 cup butter, 1/2 cup sugar, egg and vanilla. 1/4 cup softened butter Add blended dry ingred. alternately with milk; blend well. 1/2 cup sugar Spread batter in greased 9" pan and top with berries. 1 egg To make topping, combine remaining sugar, flour and cinnamon. 1 teaspoon vanilla Cut in butter until mixture is crumbly. 2/3 cup milk Sprinkle evenly on blueberries. 1 cup blueberries Bake at 375 for 45 - 50 minutes. 1/2 cup sugar 1/2 cup flour 1/2 teaspoon cinnamon 1/4 cup butter Pumpkin Coffee Cake 1/3 cup butter 1 cup sugar 2 teaspoons cinnamon 1 cup pecans
